Marmalade Loaf

Ingredients

175g Self Raising Flour, 85g Soft Brown Sugar, 115g Butter, 85g Sultanas (or mixed dried fruit), Pinch of Salt, 2 Medium Free Range Eggs, 150g Coarse cut orange marmalade, plus 2 extra tablespoonfuls for the glaze.

Method
  • Pre-heat oven to 160 deg C
  • Line a 2lb loaf tin with baking parchment
  • Rub the flour, salt and butter together to form fine crumbs. Add the sultanas and sugar. Beat the eggs and add to the mixture . Make sure everything is well combined.
  • Put 1/3 of the mixture into the base of the prepared loaf tin – spoon over ½ of the marmalade, then repeat this process with another 1/3 of the cake mixture, followed by the remaining marmalade. Finish with the rest of the cake mixture. Bake for approx 1 hour & 10 minutes or until golden brown. Turn out of the tin and cool on a wire tray.
To prepare the glaze, warm the marmalade in a small saucepan and brush over the warm cake.

Serve cut into slices, with or without butter – delicious !
