Chicken Cointreau

  • 6 chicken breasts
  • ½ onion
  • 2 chicken stock cubes
  • 1 pint of hot water
  • Zest of 1 orange
  • ½ cup of orange juice
  • ¼ cup of Cointreau (be generous)
  • 4 ozs mushrooms
  • Tomato puree to taste
  1. Brown chicken breasts in oil
  2. Fry onions
  3. Pour in stock cubes and water and simmer for 20-25 mins
  4. Remove chicken
  5. Add mushrooms and cook for 5 mins
  6. Add orange juice, Cointreau, zest of orange and tomato puree, Thicken if necessary
  7. Return chicken to the sauce
