Cheese Straws

electric 170 c. Time of cooking 7-8 mins.

150gms plain flour
75gms good parmasan cheese, one with age if possible
100gms unsalted butter.
mix till breadcrumbs and add a yolk of medium egg.
bind together. This will be very short and dry.
sprinkle flour on board, not too much and roll out into straws or small circles.
paste with egg wash and sprinkle paprika and sea salt on top.
can be eaten as just straws or topped with a topping.
